I dont know the springs, so I’m sure Yelp would have a leg up on any advice I can give.

But I have eaten all manner of game meats at The Buckhorn Exchange in Denver. Which is reportedly Denver’s oldest restaurant, according to them. According to me it’s tasty, and pricey.

But they do appear to do a bull testicle or two (and alligator, neat)

I dunno, maybe you have to go through Denver to catch a flight, maybe you stop and get weird meats there.

Can confirm the B uckhorn Exchange has required foodstuffs. The rattlesnake queso is pretty good.

It is tasty, I think it’s a bit overpriced but it has character coming out of the walls. Try to catch Buffalo Bill in the upstairs bar.

while expensive, I might argue the overpriced.

I have, on multiple occasions, at the request of children and out of town visitors, paid real american dollars to get luke warm cafeteria food from Casa Bonita. THAT place is overpriced.

And don’t get me started on the price vs. quality of The Fort. How that became so famous I’ll never know.

I’d much rather the more expensive visit to the Buckhorn anytime. Plus you get to say things like “yes, I HAVE eaten a snake”

I was going to recommend the Buckhorn Exchange but didn’t know if you wanted to venture this far north. Their oysters are pretty top notch; I don’t know how they do it but they’re not as chewy as others.

In that part of the country, you can find them at almost any honky-tonk with a cowboy motif.  When I was growing up in Nebraska, it wasn’t unusual to see them on the menu.  Most any place that has chicken-fried steak will have them as an appetizer.
